2油隔水加熱至60度左右,篩入可可粉攪拌均勻!

4篩入低筋麵粉刮刀上下翻拌,切勿畫圈,以免麵粉起筋!

5蛋白放入無油無水的容器,打蛋器打至粗泡狀態,放入三分之一的糖再打!

6打至細膩的綿綢狀態再放三分之一糖

7打至濕性泡發的時候倒入剩下的糖

8打至9分發,拉起後不低落,有小彎勾狀態!

9取三分之一蛋白霜入做好的可可麵糊里,用刮刀翻拌,

12拌海的蛋糕糊均勻而濃稠,將蛋糕倒入模具8分滿

13用手端住模具用力在桌上震幾下,以震出內部的大氣泡

14預熱好的烤箱,以120度40分鐘來烤,蓋上錫紙,不易裂開,(溫度看自家烤箱來定)再拿牙籤戳入蛋糕,看看蛋糕有否濕麵糊!出爐震模,立刻倒扣在晾網上,晾涼脫模
