Tomatoes, dices: 1, Leek, dices: 1, Russet Potato, peeled and chopped: 2, Yellow Onion: 1, Unsalted Butter: 2 tablespoons, Masala powder: 1 teaspoon, Cilantro, chopped: 1/3 cup, Garlic: 1 clove, Ginger: 1, vegetales as you like:
1Cut all materials into corresponding shapes
2Melt butter, add garlic, sliced leeks and onion.
3Add one tomato, and stir from time to time, until the vegetables are very soft but have not colored.
4Add the potatoes, eggplant, coriander (finely chopped), ginger, salt, masala powder and continue stir for 3mins.
5Add into 1/2 cup water, boil then mix the broccoli and another tomato, reduce fire to mid-low, covered, 8-10 mins.
6Uncover and stir, mashing lightly, cook until slightly dry, 4-5 mins
7Stir in cilantro and served with rice or bread. Enjoy:)
