How to Make: Authentic Tuscan Pizza?Who wants another slice?
Our chef in Tuscany, Graziella Malgeri, proves once again that Italian cooking is easier than you think. The results will change the way you think of takeout food forever. But why make pizza when it can be delivered straight to your door, you ask? First, it’s much easier to make (from scratch!) than you think – don』t be intimidated by the dough. Second, biting into a gooey, cheesy, tomato-y masterpiece is much more satisfying when you』ve done the work yourself. And finally, there’s a good chance you already have these ingredients in your cupboard!
COLLEEN MCNAMARA
What you need (makes 2 pizzas): , ♦ 500g flour, ♦ 1 pk (7g) active dry yeast, ♦ 250ml warm water, ♦ 1/2 cup olive oil, ♦ 1 tsp salt, ♦ 1 tsp sugar, ♦ Tomato sauce, ♦ Mozzarella cheese, ♦ Toppings of your choice, ♦2 medium-sized round pans
1In a medium-size bowl, soak the yeast with water, sugar, and a tablespoon of flour for 10-15 minutes.
2Add in the remaining flour, salt and olive oil. Knead the dough until you get a soft, homogeneous mixture, then stretch it onto round pizza pans greased lightly with olive oil.
3Cover the dough and let it rise in a warm place for 2-3 hours, then spread with tomato sauce, sprinkle on the mozzarella cheese, and add any toppings of your choice (our favorite Tuscan delights are olives, truffle shavings and tomatoes).
4Bake in the oven at 200°C for 17 minutes, until the crust lightly golden.
