原料
肥腸, 干辣椒, 乾花椒, 蒜, 大蔥, 薑片克, 料酒, 生抽, 糖, 郫縣豆瓣, 香葉, 八角, 香油, 醋, 鹽
步驟
1將肥腸清洗乾淨,切成塊放盆中,加醋、鹽反覆搓洗,祛除肥腸內的油塊;(如果要省事,大家可在超市買的洗乾淨的肥腸,回家後按以上方法清洗即可)

2將干辣椒用剪刀剪成小節、再將大蔥切成節、姜切成片

3洗好的肥腸在水中煮開,撈起備用

4重新燒一鍋水,放肥腸、鹽、薑片、料酒、八角、香葉、料酒,煮30分鐘,瀝干水分備用

5鍋中油7成熱後,加入姜、大蒜、乾花椒、干辣椒、郫縣豆瓣炒出香味辣味(辣椒的顏色變深)

6加入肥腸炒干水分,加入生抽、糖、醋

11鍋中油7成熱後,放入大蒜、薑絲炒

15再放入肥腸翻炒,加入生抽、糖、醋
16加入炸好的土豆絲
17加入大蔥炒均勻即可
