1将三枚鸡蛋蛋清蛋黄分离

7取三分之一蛋白放入蛋黄糊中,翻拌均匀

9烤盘铺上烘焙纸,倒入搅拌好的面糊,表面轻轻抹平,轻震几下,放入145度烤箱,烤20~25min

10烤好晾凉
11冷冻的蛋挞皮取出室温放软后将其压平
12在蛋挞皮上刷果酱(果酱选自己喜欢的就行)

13用稍小于蛋挞皮直径的圆形模具在蛋糕上压出6个圆

14把压好的圆形蛋糕体放在蛋挞皮之上,在蛋糕上再放适量果酱

1570g蛋清分三次加入30g糖粉,打至干性发泡,装入裱花袋(我用的8齿裱花嘴)

16在果酱四周挤上蛋白霜

17再将蛋挞皮四周和果酱上面分别挤上蛋白霜,直至表面全部用蛋白霜覆盖住,表面再撒上适量糖粉,烤箱200度,烤5min后,改上下火90/180度,继续烤15min
