8中火煎至鱼皮金黄后翻面,继续中火煎制

11放入煎好的豆腐块,大火烧开后转中火炖制

12炖至汤汁仅剩1/3时转大火将汤汁收浓即可

小技巧
- 鱼头最好是请买鱼的师傅帮着收拾干净然后对半劈开,在家自己用刀劈比较费劲。
- 如果图省事豆腐可以不煎。
- 炖鱼的时候往汤里稍稍放点糖,味道会更好。
- 用大酱炖鱼,酱油、生抽和盐都不需要放。
