鱼香茄子煲

简介

川味饭馆里一道家常菜

原料

茄子、猪肉馅、四川郫县豆瓣酱、蒜、姜、绍酒、酱油、白糖、盐、香葱、醋

步骤

1将茄子切成滚刀块或条, 葱姜蒜切末

2锅中放入半锅油(至少要没过茄子 也可以分批炸) 油热至八成时放入茄子。炸至茄子变软时取出 将油沥干待用

3煸香姜末和蒜末,放入猪肉馅翻炒

4放入剁碎的豆瓣酱翻炒,炒出香味和红油再烹入绍酒

5加入茄条,然后加老抽和白糖

6最后加醋调味,用湿淀粉勾芡即可

小技巧

做鱼香味道的菜最重要的就是糖和醋还有郫县豆瓣酱量的把握~~
