zucchinis, cut into noodle shapes: 2 medium, Baked tofu: 1 cup, tahini: 5 tbsp, fresh lemon juice: 1 tbsp, garlic, minced: 1 clove, nutritional yeast: 4 tbsp, maple syrup: 2 tsp, soy sauce: 3 tsp, dried turmeric: 1/2 tsp, water, start with less, gradually add more: 1/4 - 1/2 cup

1For baked tofu: Chop tofu into cubes, drizzle with salt & pepper. Bake in a 400 degree oven for 20-25 minutes.

2Blend all sauce ingredients together in a blender. Stir in water, as needed, to create desired consistency.

3Toss together the noodles, tofu and sauce, starting with a little sauce, adding more as you go.
