2將河蝦在加入少許鹽的水裡泡一會後再在流水下沖洗凈。然後將草蝦腹部的大小鉗子、蝦須、頭上的尖刀都用剪刀剪去

3全部剪好且再次的沖洗乾淨後,將蝦放在有露眼的小筐中控干水份待用
